Lovely Drive
It was a lovely Sunday to go for a drive yesterday and grab some fresh produce from my go-to market at Hy Hope Farm. The fall colours are starting to show and the autumn leaves are changing from the verdant green to bright yellow and fiery reds and oranges.
It was a quick stop and we popped in with the purpose of finding some Jalapeño Peppers and fresh Green Onions (Scallions) that are just huge!
Green Onions and Ginger Scallion Sauce

I got the Green Onions with the sole purpose of freezing them this time around but it would be a dream to be able to finally make that Ginger Scallion Sauce! I haven’t quite mustered the courage to attempt the hot oil part just yet, hopefully soon though! For the last planned attempt, we were out of a neutral oil like Avocado Oil and had to put it off until we got more. Now that we're stocked up on more Avocado Oil, hopefully next week I'll be able to grab some more market fresh green onions and make the attempt.
This time around, I froze them so that they would be readily available for when there was a dish that I could add a layer of freshness to give it more dimension. I love adding them to ramen soups and melted cheddar dishes!
Jalapeño and Red Peppers

I've made Jalapeño Poppers with a previous batch of Jalapeño Peppers that we picked up previously but we both agreed that having the Jalapeños that way was like playing roulette and you never knew which Jalapeño Popper was going to be a super spicy one or if it was going to be mild. Even though I removed the seeds, they were still able to surprise us!
This time around, I wanted to freeze them diced up so that I had a quick and easy way to add them into dishes to give it a spicy and fresh kick, like a nice and spicy hot dip. Recipe for that to come soon!
It was a quick stop and we popped in with the purpose of finding some Jalapeño Peppers and were delightfully surprised to find some Red Peppers that look like the Jalapeño Peppers but I couldn't seem to find the name for them in my Google searches. If you know what they are, let me know!
Batch Freezing: How to Fill and Store

Stasher bags have been my go-to organization bags for the last several years since I discovered them on sale while wandering my local Mountain Equipment Coop near work on my lunch break. It was the greatest discovery and started move love batching, freezing, and using re-useable silicone bags instead of one-time use plastics.

The first time that I used Stasher bags was when I diced a bunch of fresh veggies and froze them in the Stasher bags so that I would have fresh veggie on-hand to quickly add to my ramen soups that I was making quite often at the time.

Fast forward to now and I have certainly upped my batch freezing game! I soon discovered this wonderful baggy holder that works with the silicone bags but I've definitely found a great way to prop open the opening to the silicone bag with a mason jar band because the silicone bag tends to pull the handles of the holder too close together. This definitely makes it so that you don't have to fuss with keeping the bag open while you're trying to chop and scoop spicy ingredients like Jalapeños into the bag without touching it too much with your hands. With the bag opening propped open, I was able to focus on chopping up the peppers and scooping it up with my knife and dropping them into the bag. Super handy!

I even tried to colour coordinate the bags a bit, keeping the mix of peppers into a different colours Stasher bag so that it would make it a lot easier to pull from the freezer later on.

I saved my pink Stasher bag for the Red Peppers.

Make sure you spread out the ingredients to the edges of the bag so that they don't freeze into a ball or a block in one corner. This will let you break up the ingredients more easily when you want to use them.
Pop these into the freezer and they'll be ready for when you're ready to use them!
I hope this has been helpful and inspiring for your batch freezing plans! It took a bit of work to get it all chopped up, into the bags, and stored in the freezer but I'll be super happy to be able to use them later to add freshness to my meals as the season of abundant produce starts to disappear.
